Shrimp Salad

This is my poor girl’s lobster roll- creamy, crunchy, lemony shrimp salad that hits just right in a bun, lettuce cup, or straight up with chips.

Ingredients:

  • 1 cup Greek yogurt 

  • 3 tbsp lemon juice 

  • 2 tbsp extra virgin olive oil 

  • 2 tsp kosher salt 

  • 1 tsp fennel seed

  • 1 tsp cumin seeds 

  • 1 tsp black pepper 

  • 1/2 cup capers 

  • 1 cup cucumber sliced 

  • 2 cups cooked shrimp, chopped

  • 1 cup sliced cabbage, or slaw mix 

To serve: lettuce cups, buns, chips, or any vessel
