Green Goddess Chicken Salad

My Green Goddess Chicken Salad- Seen on the TODAY Show! Fresh, zesty, and so easy to make.

Ingredients:

Green Goddess Dressing (makes 4 cups):

  • 1 (32 oz) container plain fat-free Greek yogurt

  • 2 packed cups fresh basil leaves

  • 2 packed cups fresh cilantro leaves

  • 5 scallions, chopped

  • 1 avocado, pitted and scooped

  • 3 cloves garlic

  • ¼ cup freshly squeezed lemon juice

  • ¼ cup extra-virgin olive oil

  • 1 Tbsp kosher salt (plus more to taste)

    Chicken Salad:

  • 1 cup fresh corn kernels (about 2 cobs)

  • ¼ cup capers

  • 4 cups shredded rotisserie chicken

  • 1 cup sliced celery (about 4 ribs)

  • 1½ cups Green Goddess Dressing (from above)

  • 1 tsp kosher salt

  • Aleppo pepper (to garnish)

  • Pita chips or crackers (to serve)

    Preparation:

    Green Goddess Dressing:

  • Blend yogurt, basil, cilantro, scallions, avocado, garlic, lemon juice, olive oil, and salt in a food processor for 2–3 min until smooth & vibrant.

  • Taste and adjust seasoning. Refrigerate up to 3 days.

    Chicken Salad:

  • In a bowl, mix corn, capers, chicken, celery, dressing, and salt.

    Serve:

  • Sprinkle with Aleppo pepper + enjoy with pita or crackers.
