Green Goddess Chicken Salad
My Green Goddess Chicken Salad- Seen on the TODAY Show! Fresh, zesty, and so easy to make.
Ingredients:
Green Goddess Dressing (makes 4 cups):
1 (32 oz) container plain fat-free Greek yogurt
2 packed cups fresh basil leaves
2 packed cups fresh cilantro leaves
5 scallions, chopped
1 avocado, pitted and scooped
3 cloves garlic
¼ cup freshly squeezed lemon juice
¼ cup extra-virgin olive oil
1 Tbsp kosher salt (plus more to taste)
Chicken Salad:
1 cup fresh corn kernels (about 2 cobs)
¼ cup capers
4 cups shredded rotisserie chicken
1 cup sliced celery (about 4 ribs)
1½ cups Green Goddess Dressing (from above)
1 tsp kosher salt
Aleppo pepper (to garnish)
Pita chips or crackers (to serve)
Preparation:
Green Goddess Dressing:
Blend yogurt, basil, cilantro, scallions, avocado, garlic, lemon juice, olive oil, and salt in a food processor for 2–3 min until smooth & vibrant.
Taste and adjust seasoning. Refrigerate up to 3 days.
Chicken Salad:In a bowl, mix corn, capers, chicken, celery, dressing, and salt.
Serve:Sprinkle with Aleppo pepper + enjoy with pita or crackers.
