Fresh, fabulous, and incredibly zesty…

Ingredients:

  • 2 cups tri-color Quinoa, cooked

  • 2 cups parsley, chopped

  • 1 cup scallions, chopped

  • 1 cup cucumber, chopped

  • 1 cup tomato, chopped

  • 3 lemons, zested + juiced

  • 2 tbsp pomegranate molasses

  • 1/4 cup extra virgin olive oil

  • 1 tbsp salt
