Fresh, fabulous, and incredibly zesty…
Ingredients:
2 cups tri-color Quinoa, cooked
2 cups parsley, chopped
1 cup scallions, chopped
1 cup cucumber, chopped
1 cup tomato, chopped
3 lemons, zested + juiced
2 tbsp pomegranate molasses
1/4 cup extra virgin olive oil
1 tbsp salt
