Lentil Salad

She’s fresh, hearty, zesty, even healthy… and she hits EVERY time!

Ingredients:

Lentil Salad:

  • 2 cups green lentils, cooked

  • 1 cup chopped cucumber

  • 1 cup chopped parsley

  • 1/2 cup chopped scallions

  • 8-10 mint leaves, torn

  • 1 cup walnuts

  • 1/2 cup pomegranate seeds

  • 2-3 pickled labneh balls crumbled (optional)

Pomegranate Vinaigrette for Salad:

  • 1 tsp Aleppopo pepper

  • 2 tsp kosher salt

  • 1 lemon zested

  • 3 tbsp pomegranate molasses

  • 1/4 cup lemon juice

  • 1/4 cup
