Strawberry, Halloumi, & Cucumber Summer Salad

A refreshing, tangy, salty-sweet salad that’s perfect for hot days and picnic spreads.

Ingredients:

  • 1 pint strawberries, hulled & halved

  • 1 block halloumi, cubed

  • 3 Persian or small cucumbers, thinly sliced

  • 2 tbsp pomegranate molasses

  • A handful of fresh mint leaves

  • Nigella seeds, to taste

  • Maldon salt, to taste

  • Olive oil (optional, for frying)

Instructions:

  • Use your favorite plate, or bowl, and assemble the strawberries, halloumi, and cucumber. You can sear your halloumi if you want to, but I’m not today!

  • Drizzle with pomegranate molasses and sprinkle with nigella seeds, torn mint leaves, and a pinch of Maldon salt.

  • Toss gently and serve immediately- or let it sit for a few minutes to let the flavors mingle

Chef’s Tip:

  • Add arugula or torn basil if you want more greens, or top with toasted pistachios for crunch!
