Strawberry, Halloumi, & Cucumber Summer Salad
A refreshing, tangy, salty-sweet salad that’s perfect for hot days and picnic spreads.
Ingredients:
1 pint strawberries, hulled & halved
1 block halloumi, cubed
3 Persian or small cucumbers, thinly sliced
2 tbsp pomegranate molasses
A handful of fresh mint leaves
Nigella seeds, to taste
Maldon salt, to taste
Olive oil (optional, for frying)
Instructions:
Use your favorite plate, or bowl, and assemble the strawberries, halloumi, and cucumber. You can sear your halloumi if you want to, but I’m not today!
Drizzle with pomegranate molasses and sprinkle with nigella seeds, torn mint leaves, and a pinch of Maldon salt.
Toss gently and serve immediately- or let it sit for a few minutes to let the flavors mingle
Chef’s Tip:
Add arugula or torn basil if you want more greens, or top with toasted pistachios for crunch!
